  • 1 lb kielbasa, sliced into rounds
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 32 oz chicken broth (or vegetable broth for a vegetarian option)
  • 1 can (14.5 oz) sauerkraut, drained and rinsed
  • 2 large potatoes, peeled and diced
  • 1 carrot, diced
  • 1 tsp dried thyme
  • 1 tsp caraway seeds (optional)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preparing the Kielbasa Heat the olive oil in a large pot over medium heat. Cook the sliced kielbasa for about 5 minutes or until it’s lightly browned. Once done, remove the kielbasa from the pot and set aside.
  2. Cooking the Vegetables In the same pot, add the diced onion and sauté for 3-4 minutes until it starts to soften. Following the onion, add the minced garlic and sauté for another minute until it becomes fragrant.
  3. Simmering the Soup Add the chicken broth to the pot along with the diced potatoes, carrots, and sauerkraut. Sprinkle the dried thyme and caraway seeds if using. Stir well to combine all ingredients. Increase the heat to bring the mixture to a boil, then reduce the heat to let it simmer. Allow the soup to simmer for 20-25 minutes, or until the potatoes are tender.
  4. Adding Kielbasa Return the previously browned kielbasa to the pot. Continue to simmer the soup for an additional 5-10 minutes, letting the flavors meld together thoroughly.
  5. Season and Serve Taste the soup and adjust the seasoning with salt and pepper as needed. Serve the soup hot, garnished with freshly chopped parsley.
