Korean Rice Balls: A Delicious and Versatile Snack

Korean rice balls, known as “jumeokbap,” are a delightful and versatile snack that can be enjoyed anytime. These savory rice balls are filled with delicious fillings like tuna mayo or bulgogi and are rolled in seaweed seasoning for an extra burst of flavor. Perfect for picnics, lunchboxes, or a quick bite, Korean rice balls are both fun to make and eat!

Ingredients:

  • 3 cups cooked rice (short or medium-grain; warmed)
  • 1/3 cup seaweed seasoning
  • 1½ teaspoons toasted sesame oil (or more)
  • 1/2 small carrot, finely diced (optional)

For the Tuna Mayo Filling:

  • 5 oz canned tuna, drained
  • 1½ tablespoons Japanese mayonnaise
  • Salt & pepper, to taste

For the Bulgogi Filling:

  • 1 cup ground beef bulgogi

Directions:

  1. Prepare the Tuna Mayo Filling:
Start by making the filling. For the tuna mayo filling, add the drained canned tuna and Japanese mayonnaise to a small bowl. Mix well until combined, then season with salt and pepper to taste. Set aside.
  2. Season the Rice:
In a small pan, sauté the finely diced carrots with a bit of oil until they soften, about 3 minutes. Once done, add the sautéed carrots and toasted sesame oil to the warm rice. Mix until the rice is evenly seasoned and fragrant.
  3. Shape the Rice Balls:
Take about 2 tablespoons of the seasoned rice and gently flatten it against the palm of your hand. Place about 1 tablespoon of your desired filling (either tuna mayo or bulgogi) in the center of the rice. Top the filling with a bit more rice, then gently but firmly shape the rice into a ball, encasing the filling completely. Tip: Applying a bit of vegetable oil to food-safe gloves will make handling the rice easier.
  4. Coat with Seaweed Seasoning:
Roll each rice ball in seaweed seasoning until fully coated. The seaweed adds a delightful crunch and a savory, umami flavor that complements the fillings perfectly.
  5. Serve and Enjoy:
Your Korean rice balls are ready to be served! Enjoy them warm or at room temperature. They make a perfect snack or light meal, and they’re ideal for sharing.
