Ingredients:

  • 4 slices of thick bread (any kind you like)
  • 2 Tbsp butter, softened
  • 2 Tbsp pasta sauce
  • 2 Tbsp ricotta cheese or cottage cheese
  • 4 large tomato slices (optional)
  • 2 slices mozzarella or ΒΌ cup shredded
  • 2 Tbsp shredded parmesan cheese
  • Dried herbs (or fresh)

Instructions:

  1. Prep Your Bread: Begin by spreading half a tablespoon of softened butter on each slice of bread, ensuring it’s evenly coated. Place each buttered slice butter-side down on a flat surface.
  2. Create the Layers:
    • On two slices of bread, spread 2 tablespoons of pasta sauce. On the remaining two slices, spread 2 tablespoons of ricotta or cottage cheese.
  3. Assemble the Layers:
    • On the slices with pasta sauce, layer the tomato slices (if using) and sprinkle dried or fresh herbs for that lasagna-like aroma.
    • Top each slice with shredded parmesan and mozzarella.
  4. Top with Ricotta Bread:
    • Place the ricotta-spread slices on top of the others, ensuring the ricotta side is facing down. Now, you have two lasagna-inspired sandwiches ready for cooking.
  5. Grill to Perfection:
    • In a preheated skillet over medium heat, cook each sandwich for 2 to 3 minutes per side, or until golden brown and the cheese is fully melted. Make sure to press down gently with a spatula to achieve a crispy, even crust.
  6. Serve and Enjoy:
    • Once cooked, transfer to a plate, cut in half if desired, and serve warm. The melted cheese, tangy sauce, and creamy ricotta will deliver a flavor experience reminiscent of traditional lasagna.
