Meatloaf mix:

1 pound ground beef (20% fat)
1 pound ground turkey (pork optional)
1 egg
1 onion, diced
5 cloves garlic, minced
1/4 cup fresh parsley, chopped
3 oz tomato paste
3/4 cup panko breadcrumbs
1/3 cup milk
2 teaspoons dried Italian seasoning
2 teaspoons salt
1 teaspoon black pepper

Build it:

6 full lasagna noodles
3/4 cup ricotta cheese
1 cup mozzarella cheese

Sauce:

2 tablespoons olive oil
1 shallot, minced
2 cloves garlic, minced
3 oz tomato paste
14 oz crushed tomatoes
2 tablespoons Worcestershire sauce
1/4 cup honey


Instructions

Preheat oven to 425°F. Mix all meatloaf ingredients in a large bowl until fully combined.
Boil lasagna noodles until slightly undercooked. Lay two noodles overlapping on a parchment-lined sheet pan, remove, then set the base with 1/4 of the meat mix.
Place noodles back, top with 1/3 ricotta and some mozzarella. Repeat layering, ending with meat. Shape into a rectangular loaf.
Bake for 30 minutes. Meanwhile, for the sauce, sauté shallots and garlic in olive oil, add tomato paste, then tomatoes, Worcestershire, and honey. Simmer for 20 minutes.
Spread sauce over meatloaf, bake for another 15 minutes. Rest for 10 minutes before serving.
