  • 2 – 3 tablespoons lemon juice
  • ¼ teaspoon dried lavender buds (optional, for garnish)

Directions:

  1. Prepare the Lavender Sugar:
    • Start by adding the granulated sugar and dried lavender buds to a food processor. Process for 10-15 seconds until the lavender is finely ground and well incorporated into the sugar. Taste the sugar mixture and adjust with more lavender if you prefer a stronger flavor.
    • Add the lemon zest to the lavender sugar in the food processor and continue processing until the mixture resembles wet sand. This will help infuse the lemon flavor into the sugar.
  2. Make the Cookie Dough:
    • In a stand mixer fitted with the paddle attachment, or using an electric hand mixer, beat the softened butter and lemon lavender sugar together on medium speed until well combined and fluffy, about 3-4 minutes.
