Buttery Ritz Topping:
35 Ritz crackers
2 cups Oyster Crackers (Westminster preferred)
4 tablespoons butter, melted
¼ cup parsley, chopped
Lobster:
½ cup butter
3 cloves garlic, finely chopped
¼ cup sherry
Juice from one lemon
Salt and pepper to taste
24 oz. lobster meat (claws and knuckles used)


Instructions

Preheat oven to 350°F (175°C).
Arrange 6 ovenproof dishes on a sheet pan.
In a food processor, pulse Ritz and oyster crackers until crumbed (not completely fine).
Mix crumbs with melted butter and parsley in a bowl, set aside.
Heat butter in a large sauté pan over medium. Once melted, add garlic and cook for 30 seconds.
Add sherry, lemon juice, salt, and pepper.
Add raw lobster meat, cook until it begins to firm (2-3 minutes). Remove from heat.
If using cooked lobster, instead add directly to dishes and cover with the butter mixture.
Distribute lobster evenly across dishes, top with cracker mixture.
Bake for 10-15 minutes until lobster is hot and topping is golden.
Serve with additional lemon wedges and parsley.
