Craving something sweet but short on time? My Lazy Man’s Tiramisu recipe is the perfect solution for a quick yet indulgent dessert. This no-bake delight can be assembled in mere minutes and is guaranteed to satisfy your dessert cravings without the fuss of traditional recipes. Let’s dive into how you can whip up this delectable treat in no time!

Ingredients:

  • 1 lb (450 g) Cantuccini Cookies – These Italian almond biscuits will form the base of our tiramisu, providing a delightful crunch.
  • 1 cup (225 ml) Vin Santo – This sweet Italian wine adds a rich, aromatic flavor to the cookies, though any dessert liqueur of your choice can be used.
  • 1 lb (450 g) Mascarpone Cheese – The creamy heart of our tiramisu, providing a silky texture and rich taste.
  • 2 tbsp (30 ml) Sugar – To sweeten our mascarpone mixture just right.
  • 3.5 oz (100 g) Bittersweet Chocolate, chopped (optional) – For those who crave a chocolatey touch, this adds a nice contrast to the creamy mascarpone.

Directions:

  1. Prepare the Cookies:
    • Place the cantuccini cookies in a cake pan. You can either bash them with the bottom of a pan for a satisfying crunch or chop them neatly with a knife, depending on your mood and preference.
    • Pour the Vin Santo over the cookies, aiming to moisten them without making them soggy. The goal is to enhance their flavor while retaining a bit of crunch.
  2. Mix the Mascarpone Cream:
    • In a separate bowl, combine the mascarpone cheese and sugar. Adjust the sweetness according to your taste by adding more or less sugar.
    • Mix in a small amount of the liqueur to infuse the cheese mixture with flavor. If you opted for the optional chocolate, you can chop and mix it into the mascarpone now, or save it to sprinkle on top later.
  3. Assemble the Tiramisu:
    • Spread the mascarpone mixture over the moistened cookies, ensuring they are completely covered.
    • For an extra touch of indulgence, sprinkle the top with additional chopped chocolate and cookie bits if desired.
  4. Serve Immediately:
    • This tiramisu doesn’t need to set, so you can serve it right away. Scoop out generous portions and enjoy the melding of flavors and textures.

Ingredients

Scale

1 lb (450 g) cantuccini cookies
1 cup (225 ml) Vin Santo
1 lb (450 g) mascarpone cheese
2 tbsp (30 ml) sugar
3.5 oz (100 g) bittersweet chocolate, chopped (optional)

Instructions

Bash up your cookies. You can just smack them with the bottom of a pan (which is very satisfying if you have had a bad day), or chop them with a knife (which can make you feel very cheffy if you’re in the right mood). Put them into a cake pan and then pour the Vin Santo, or your liqueur of choice over them. The goal here isn’t to drown the cookies. You want to give them flavor, but have them still retain their crunch.
In a separate bowl, mix together the mascarpone cheese, sugar to taste, and the rest of the liqueur, again to taste. If you want, you can also chop up some chocolate and add it here, or you can wait until the end and sprinkle it on top of the individual servings. I’ve done both and one method isn’t better than the other. Whatever you choose, mix this well so that everything is nicely incorporated, and then spread the whole thing over the cookies so that they’re fully covered.
You can, if you want, go one step further and sprinkle chopped chocolate and chopped cookie bits over the whole thing. You can serve this Tiramisu immediately.
