Ingredients
3/4 cup butter, room temperature
4 oz cream cheese, room temperature
1 3/4 cups granulated sugar
1 egg
1 tsp vanilla extract
2 tsp lemon extract
2 Tbsp lemon juice
2 Tbsp lemon zest
1 tsp salt
1/2 tsp baking soda
3 cups all-purpose flour
3/4 cup white chocolate chips
1 cup fresh blueberries
5 Tbsp granulated sugar for rolling
Instructions
In a stand mixer, cream together butter, cream cheese, and granulated sugar until smooth and fluffy.
Add the egg, vanilla extract, lemon extract, lemon juice, and lemon zest, beating for 1 minute.
Mix in salt, baking soda, and flour until just combined.
Gently fold in white chocolate chips and blueberries.
Scoop the dough into balls with 2 tablespoons each, roll in granulated sugar, and place on a dish to freeze for 30 minutes.
Preheat oven to 350°F and line a baking sheet with parchment paper.
Bake cookies for 18-20 minutes until lightly golden around the edges.
