Description

These Lemon Brownies offer a delightful twist on traditional brownies by swapping chocolate for zesty lemon. The rich, buttery base is balanced with fresh lemon juice and zest, giving each bite a perfect combination of sweet and tangy flavors. Topped with a simple lemon glaze, these brownies are soft, moist, and pack a citrus punch that’s perfect for spring and summer gatherings.

Ingredients

Scale

For the Batter:
1 cup butter, softened to room temperature
1 ½ cups sugar
Zest of 1 lemon
2 Tbsp fresh lemon juice
4 large eggs
1 ½ cups all-purpose flour
½ tsp salt
For the Glaze:
1 cup powdered sugar
2 Tbsp fresh lemon juice
2 tsp lemon zest

Instructions

Preheat your oven to 350°F (175°C) and spray a 9×13 inch pan with non-stick spray.
In a large mixing bowl, cream the softened butter and sugar together until light and creamy. Beat in the lemon zest, lemon juice, and eggs until smooth.
Stir in the flour and salt until just combined. Do not overmix.
Spread the batter evenly into the prepared 9×13 inch pan.
Bake for 30-35 minutes, or until the edges are lightly golden and the middle is set. You can test by inserting a toothpick; it should come out with just a few moist crumbs.
While the brownies are still hot, whisk together all the glaze ingredients, adjusting the lemon juice for desired consistency. The glaze should be pourable.
Spread the glaze evenly over the hot lemon brownies, allowing it to soak into the bars.
Let the brownies cool completely, then cut them into squares and serve.
