Lemon Cardamom Cookies

- 1/2 cup (113g) plant-based (or regular) butter, softened
- 1/3 cup (40g) powdered sugar
- Pinch of salt
- 1/2 tsp vanilla extract
- 1/2 tsp lemon extract
- 1 tsp ground cardamom
- Zest from 1 large lemon (or 2 small lemons)
- 1 cup (130g) unbleached all-purpose flour
Topping
- 1/2 cup (60g) powdered sugar
- Lemon zest (optional)
Directions
- Preheat and Prepare: Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Mix Butter and Sugar: In a medium bowl, beat together the softened butter and powdered sugar until fully combined.
- Add Flavorings: Beat in the salt, vanilla extract, lemon extract, ground cardamom, and lemon zest.
- Form the Dough: Add the flour and use a large spoon or spatula to mix until a dough forms.
- Shape Cookies: Scoop dough balls, about 1 tablespoon in size, and roll each one smooth. Place them evenly on your baking sheet (they won’t spread much, so all 18 should fit on one sheet).
- Bake: Bake at 325°F (163°C) for 8-10 minutes.
- Prepare Topping: While the cookies bake, prepare 1/2 cup of powdered sugar in a small bowl.
- Coat Cookies: Once the cookies are done, allow them to cool on the baking sheet for 4 minutes. Then, toss each cookie in the powdered sugar. Place them on a platter or cooling rack to cool completely.
- Optional Topping: If the cookies look like they need more powdered sugar once cool, you can toss them once more. Top with fresh lemon zest if desired.
- Store: Store leftover cookies in an airtight container at room temperature.
