This Lemon Cream Chia Pudding is a refreshing, light, and healthy dessert that combines the zesty flavor of lemons with the creamy richness of coconut cream. The chia seeds add a delightful texture, making this pudding not only delicious but also packed with nutrients.
Ingredients
For the Chia Pudding:
¼ cup chia seeds
1 cup almond milk
Zest of 1 lemon
2 tbsp honey (or maple syrup for vegans)
¼ tsp vanilla extract
¼ tsp salt
For the Lemon Cream:
2 tbsp lemon juice
1 ½ cups coconut cream (refrigerate a can of coconut cream/milk overnight and scoop only the hardened cream from the top)
⅓ cup honey (or maple syrup for vegans)
Zest of 1 lemon
¼ tsp turmeric for color (optional)
Instructions
In a bowl, mix together all the chia pudding ingredients: ¼ cup chia seeds, 1 cup almond milk, lemon zest, 2 tbsp honey or maple syrup, ¼ tsp vanilla extract, and ¼ tsp salt. Whisk until well combined.
Cover the bowl and refrigerate the mixture for at least an hour or leave it overnight for best results.
In a blender, add all the lemon cream ingredients: 2 tbsp lemon juice, 1 ½ cups coconut cream, ⅓ cup honey or maple syrup, lemon zest, and ¼ tsp turmeric for color (optional). Blend until the mixture is creamy and smooth.
Divide the chia pudding mixture evenly between 4 jars or cups. Pour the lemon cream over the chia pudding.
Allow the jars or cups to set in the fridge for several hours until fully chilled and set.
