Description

This Lemon Curd Chia Pudding is a delightful blend of creamy coconut milk, zesty lemon, and nutrient-rich chia seeds, creating a refreshing and light dessert that’s perfect for warm days. The turmeric adds a subtle golden hue, making this pudding as visually appealing as it is tasty.


Ingredients

Zest of 1 large lemon or 2 small lemons
Juice of 2 large lemons
13.5 or 15 oz can full-fat coconut milk (about 1.5 cups)
1/4 cup water (optional)
3 tbsp or more sweetener (raw sugar recommended)
A pinch of salt

1/4 tsp turmeric (or more, to taste)
3 tbsp chia seeds (use 5 to 6 tbsp for a firmer pudding)


Instructions

In a blender, combine the lemon zest, lemon juice, coconut milk, water (if using), sweetener, salt, and turmeric. Blend until well combined.
Add the chia seeds and pulse once or twice to evenly distribute the seeds throughout the mixture.
Taste the mixture and adjust the sweetness and tanginess as desired. Add more lemon juice or zest if needed, and mix or blend in.
Pour the mixture into individual serving glasses. Chill in the refrigerator overnight to allow the pudding to set. If needed, stir the pudding after an hour to redistribute the chia seeds.
