Ingredients

1/2 cup tahini
2 tablespoons olive oil
1/4 cup fresh lemon juice (about 2 large lemons)
1/2 teaspoon salt
1 teaspoon Dijon mustard
1 teaspoon maple syrup
3 cloves garlic, finely minced
1/4 cup + 2 tablespoons water (or more as needed)


Instructions

Finely mince the garlic and add it to a bowl or jar with the tahini, olive oil, lemon juice, salt, Dijon mustard, and maple syrup. Start with just 1/4 cup of water.
Shake the ingredients together in a jar or whisk them in a bowl until well combined. If the dressing is too thick, gradually add the extra two tablespoons of water to thin it to your desired consistency.
Taste and adjust the flavors as needed. Tahini can be naturally bitter, so you may want to add a touch more maple syrup if desired.
Serve the dressing over your favorite salad or use it as a dip, and enjoy!
