Lemon One-Pan Pasta Recipe

Ingredients

Chicken Breasts

  • 2 chicken breasts, pounded to an even 1/4 inch thick
  • 1-2 tablespoons Cajun seasoning or all-purpose chicken seasoning
  • 2 tablespoons olive oil
  • 1/3 cup chicken stock

Lemon Parmesan Pasta

  • 4 tablespoons butter
  • 6 cloves fresh garlic, minced
  • 3/4 cup dry white wine (Sauvignon Blanc, Chardonnay, or Pinot Grigio)
  • 3/4 cup chicken stock
  • 3 tablespoons fresh lemon juice + zest of one lemon
  • 1 cup half and half, room temperature
  • 1/2 lb angel hair pasta
  • 2/3 cup Parmesan cheese, freshly shredded
  • Fresh parsley to garnish
  • Red pepper flakes to taste
  • Salt and pepper to taste (about 1/2 tsp each)

Directions

  1. Season the Chicken: Liberally season both sides of the chicken breasts with Cajun or all-purpose chicken seasoning.
  2. Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken and cook undisturbed for 3-4 minutes. Flip the chicken once, add 1/3 cup of chicken stock, reduce the heat to a simmer, cover the pan, and cook for an additional 5 minutes. Remove the chicken from the skillet and set it aside on a plate, tented with foil to keep warm.
  3. Prepare the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Season with salt and pepper.
  4. Deglaze the Pan: Pour in the white wine and cook for 2 minutes to reduce slightly. Add 3/4 cup chicken stock and the fresh lemon juice, then gradually pour in the half and half. Bring the mixture to a gentle boil.
  5. Cook the Pasta: Add the angel hair pasta to the skillet, breaking it in half if necessary. Simmer for 4-5 minutes, stirring frequently, then reduce the heat to low and continue to simmer until the pasta is al dente.
  6. Finish the Sauce: Gradually stir in the Parmesan cheese, reserving some for serving. The sauce will thicken as it sits.
  7. Combine and Serve: Sprinkle the dish with fresh parsley, lemon zest, and red pepper flakes. Toss well to combine all the flavors. Serve the pasta with the sliced chicken on top and additional Parmesan cheese.

Instructions

Season chicken liberally on both sides with seasoning. Heat oil in a large skillet over medium heat. Add chicken and cook undisturbed for 3-4 minutes.
Flip just once, add 1/3 cup chicken stock, reduce heat to simmer, cover pan, and cook for 5 more minutes. Remove chicken and set aside on a plate tented with foil.
Melt butter over medium heat in the same skillet. Add minced garlic and cook for 1 minute until fragrant. Season with salt and pepper.
Add 3/4 cup white wine and cook for 2 minutes to reduce slightly. Add 3/4 cup chicken stock and lemon juice. Gradually pour in half and half and bring to a gentle boil.
Add pasta, breaking in half if necessary. Simmer for 4-5 minutes, stirring frequently, then reduce heat to low and continue to simmer until pasta is al dente.
Gradually add Parmesan, reserving some for serving. The sauce will thicken as it sits.
Sprinkle with parsley, lemon zest, and red pepper flakes. Toss well and serve with sliced chicken and additional Parmesan on top.
