- 1 Tbsp olive oil, for sautéing

- 2 large eggs
- 1 garlic clove, minced
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 cup Parmesan cheese, grated
- 3 Tbsp all-purpose flour
- 8 Tbsp unsalted butter
- 2 garlic cloves, minced
- 1/4 cup lemon juice
- 1/4 cup chicken broth
- 1/4 tsp ground black pepper
Instructions
- Prepare the Chicken Cut the chicken fillets in half lengthwise and lightly beat with a meat mallet until even in thickness. This ensures quick and even cooking.
- Create Egg and Parmesan Mixtures In one bowl, whisk together the eggs, minced garlic, Italian seasoning, salt, and pepper. In another bowl, mix the grated Parmesan cheese with the flour.
- Coat the Chicken Dip each chicken piece firstly into the egg mixture, ensuring it’s well-coated. Then dredge in the Parmesan mixture. Shake off any excess coating for a perfect crust.
- Cook the Chicken Heat olive oil in a large skillet over medium heat. Place the breaded chicken in the skillet and cook for 4-5 minutes on each side until the chicken is golden, crispy, and cooked internally to 165˚F.
- Make the Lemon Butter Sauce In a separate saucepan, melt butter over medium heat. Add the minced garlic and sauté until fragrant. Stir in the chicken broth, lemon juice, and pepper, and simmer for about 2 minutes.
- Combine and Serve Pour the lemon butter sauce over the cooked chicken in the skillet. Turn the chicken in the sauce to coat thoroughly. Garnish with lemon slices and parsley if using.
