This Lemon Raspberry Chia Seed Pudding is a delightful blend of creamy coconut milk and Greek yogurt, combined with the bright flavors of lemon and fresh raspberries. The chia seeds add a wonderful texture and provide a healthy boost of omega-3s and fiber, making this pudding not only delicious but also nutritious.

1 cup plain Greek yogurt
1 cup coconut milk
1/4 cup chia seeds
1 tablespoon lemon zest
2 tablespoons freshly squeezed lemon juice
1 cup raspberries
1 1/2 tablespoons honey


Instructions

In a large storage container with a lid, combine the Greek yogurt, coconut milk, chia seeds, lemon zest, lemon juice, raspberries, and honey. Stir well to ensure all the chia seeds are evenly mixed in, and gently mash the raspberries to release their juices, especially if using frozen berries.
Place the lid on the container and refrigerate overnight or for at least 8 hours, allowing the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
When ready to serve, stir the pudding and portion it into bowls. Top with extra raspberries and a drizzle of honey if desired.
