- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar for lemon filling
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1/4 cup powdered sugar for dusting
Instructions
- Preheat your oven to 350F (175C). Grease a muffin tin or line it with cupcake liners.
- In a large bowl, cream together the softened butter and 3/4 cup granulated sugar until light and fluffy. Mix in the vanilla extract. Gradually add the flour and salt, mixing until combined.
- Divide the cookie dough evenly among the muffin cups, pressing down to shape them into cups. Bake for 12-15 minutes or until lightly golden.
- In a separate bowl, whisk together the eggs, 1 cup granulated sugar, lemon juice, and lemon zest until smooth.
- Once the cookie cups are done baking, remove them from the oven and carefully pour the lemon filling into each cookie cup, filling them about 3/4 full.
- Return to the oven and bake for an additional 15-18 minutes, or until the filling is set.
- Allow to cool completely, then dust with powdered sugar before serving.
