  • 3 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 large egg
  • 3 cups all-purpose flour (360 grams)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sugar, for rolling cookies (50 grams)

Instructions

  1. Step 1: Creaming the Butter and Sugar In a mixing bowl, use an electric mixer to beat the butter, sugar, and lemon zest together for 12 minutes until the mixture is light and fluffy.
  2. Step 2: Adding Wet Ingredients To the creamed butter and sugar mixture, add the lemon juice and egg, and continue mixing to combine all the ingredients thoroughly.
  3. Step 3: Incorporating Dry Ingredients Gradually mix in the flour, baking soda, and salt by hand with a spatula, ensuring that the dough is uniformly combined without overmixing.
  4. Step 4: Chilling the Dough Cover the mixing bowl with plastic wrap and refrigerate the dough for 30-60 minutes to allow it to firm up slightly, making it easier to handle.
  5. Step 5: Preparing to Bake Preheat your oven to 350ºF (177ºC). Pour 1/4 cup sugar into a small bowl for rolling the cookies. Line a baking sheet with a silicone baking mat or parchment paper.
