  • 14 oz can fire roasted diced tomatoes (regular diced tomatoes can be substituted)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/4 tsp red pepper flakes (increase to 1/2 tsp for extra heat)
  • Fresh parsley, for garnish
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Sauté the Sausage: In a large stock pot or Dutch oven, heat on medium and brown the sausage with the diced onion and minced garlic.
  2. Add Liquids and Spices: Add the chicken broth, fire roasted diced tomatoes, dried thyme, dried rosemary, red pepper flakes, salt, and pepper.
  3. Prepare the Linguine: If necessary, break the linguine noodles in half to fit into the pot and press them down to ensure they are fully submerged in the liquid.
  4. Boil and Simmer: Cover the pot, bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
  5. Adjust Consistency: For a thicker consistency, allow the pot to simmer with the lid off.
  6. Add Cheese: When the pasta is cooked and most of the liquid has evaporated, gently stir in the shredded mozzarella cheese until well combined.
