Ingredients

1/2 cup butter (I use salted)
2 oz. Baker’s unsweetened chocolate
1 tablespoon vanilla extract
8 oz. package cream cheese, softened
1/2 cup Splenda or Stevia (or any sweetener of your choice, adjust to taste)


Instructions

In a small pan, melt the butter and unsweetened chocolate over low heat. Stir frequently to ensure the mixture melts evenly without burning.
Once the chocolate and butter are fully melted, remove the pan from heat and stir in the vanilla extract and your sweetener of choice until well blended.
Place the softened cream cheese in a medium-sized mixing bowl. Pour the warm chocolate mixture over the cream cheese.
Using a hand mixer, blend the cream cheese and chocolate mixture for about 2 minutes, or until the mixture is smooth and creamy.
Grease a small pan (I use a 6×8-inch pan) and pour the fudge mixture into the pan, spreading it evenly.
Freeze the fudge for about 1 hour or until it is firm enough to cut into squares.
Once set, cut the fudge into squares and enjoy. Store any leftovers in the freezer for a firmer texture or in the refrigerator for a softer texture.
