Pasta:
12 ounces pasta
Butter Poached Lobster:
3 5-ounce lobster tails
1 cup (2 sticks) unsalted butter
1 clove garlic, peeled and smashed
½ teaspoon kosher salt
Herb Parmesan Sauce:
3 cloves garlic, minced
1 teaspoon fresh thyme leaves
2 teaspoons fresh basil, torn
¼ teaspoon red pepper flakes (adjust to taste)
Zest of half a medium lemon
½ cup freshly grated parmesan cheese
½ cup reserved pasta water
Fresh basil and extra parmesan for garnish


Instructions

In a large pot, bring 5 quarts of water to a boil. Cook pasta to al dente as per package instructions.
For the Lobster:
Use kitchen shears to cut the bottom of the lobster tail shells. Pry out the meat, clean any veins, and pat dry. Season with salt.
In a saucepan, melt butter with smashed garlic over medium heat. Add lobster tails, cook until opaque, about 4-5 minutes, then remove and chop.
For the Sauce:
In the same pan, sauté minced garlic, thyme, basil, lemon zest, and red pepper flakes until fragrant. Turn off the heat.
Add cooked pasta and reserved water to the pan. Stir in parmesan until well combined.
Incorporate chopped lobster. Serve garnished with basil and additional parmesan.
