Ingredients
1 pound peeled and deveined shrimp
5 tablespoons unsalted butter, melted
3/4 cup chicken broth
2 tablespoons lemon juice
3 cloves garlic, minced
Salt and pepper to taste
For the Topping:
3/4 cup panko breadcrumbs
1.5 tablespoons olive oil
1/4 cup shredded Parmesan cheese
1/4 teaspoon salt
Instructions
Preheat your oven to 430°F (220°C).
In a casserole dish, combine the chicken broth and half of the melted butter. Bake for 10 minutes to reduce the liquid.
Meanwhile, toss the shrimp with the remaining melted butter, minced garlic, lemon juice, salt, and pepper.
Remove the casserole dish from the oven and spread the shrimp mixture evenly across the dish.
In a separate bowl, combine the panko breadcrumbs, Parmesan cheese, olive oil, and salt. Sprinkle the breadcrumb mixture evenly over the shrimp and sauce.
Bake the shrimp for 12 minutes, or until fully cooked. For extra browning, broil on high for an additional 1-2 minutes.
