Ingredients

  • 3 lbs boneless skinless chicken thighs
  • ½ teaspoon salt
  • 3 Tablespoons cornstarch
  • 3 Tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of fresh ginger root, grated
  • ½ teaspoon crushed red pepper flakes
  • 1 ½ cups chicken stock
  • ⅓ cup bourbon
  • ⅓ cup soy sauce
  • ½ cup brown sugar
  • 4 Tablespoons vinegar
  • 1 Tablespoon toasted white sesame seeds
  • Chopped green scallions for garnish (optional)

Directions

  1. Prepare the Chicken: Start by cutting the chicken thighs into 1″ to 1 ½” chunks. Place them in a large bowl, sprinkle with salt, and toss with the cornstarch to coat well. This helps in thickening the sauce later and gives the chicken a delightful texture.
  2. Brown the Chicken: Heat a 12″ skillet with vegetable oil over medium-high heat. Once the oil is hot, add the chicken pieces and brown them for about 2-5 minutes. You don’t need to fully cook them at this stage. Once browned, transfer the chicken back to the bowl.
  3. Sauté Aromatics: In the same skillet, reduce the heat to medium and add the minced garlic, grated ginger, and chili flakes. Sauté for about 1 minute until fragrant, stirring constantly to prevent burning.
  4. Create the Sauce: Pour in the chicken stock, bourbon, soy sauce, brown sugar, and vinegar into the skillet with the aromatics. Bring the mixture to a boil, then reduce the heat and let it simmer for about 6-8 minutes. The goal here is to reduce the sauce so it thickens slightly and intensifies in flavor.
  5. Cook Chicken in Sauce: Return the browned chicken to the skillet and increase the heat to medium-high. Cook for about 5 minutes, stirring occasionally, until the chicken is tender and the sauce has thickened enough to coat the chicken nicely.
  6. Final Touches: Once the chicken is fully cooked and the sauce is velvety and rich, stir in the toasted sesame seeds for a nice texture and nutty flavor.
  7. Serve and Enjoy: Serve this mouth-watering bourbon chicken over a bed of fluffy white rice, garnished with chopped green scallions if desired. It’s not just delicious but also makes a visually appealing dish.

3 Tablespoons vegetable oil
3 cloves garlic, minced
1-inch piece of fresh ginger root, grated
½ teaspoon crushed red pepper flakes
1 ½ cups chicken stock
⅓ cup bourbon
⅓ cup soy sauce
½ cup brown sugar
4 Tablespoons vinegar
1 Tablespoon toasted white sesame seeds
Chopped green scallions for garnish (optional)

Instructions

Cut the chicken thighs into 1″ to 1 ½” chunks. Place in a large bowl, sprinkle with salt, and toss with the cornstarch.

Add chicken stock, bourbon, soy sauce, brown sugar, and vinegar. Bring to a boil, then lower heat and simmer to reduce sauce for about 6-8 minutes.
Once sauce has thickened, return chicken to the skillet and cook on medium-high for about 5 minutes, or until chicken is tender and no longer pink.
Reduce heat, ensure chicken is cooked through, and sauce has thickened enough to coat the chicken.
Stir in toasted sesame seeds.
