This recipe features tender chicken thighs glazed in a delectable sauce made with real bourbon, soy sauce, and hints of ginger and garlic, creating a perfect balance of sweet and savory.
Ingredients
3 lbs boneless skinless chicken thighs
½ teaspoon salt
3 Tablespoons cornstarch
3 Tablespoons vegetable oil
3 cloves garlic, minced
1-inch piece of fresh ginger root, grated
½ teaspoon crushed red pepper flakes
1 ½ cups chicken stock
⅓ cup bourbon
⅓ cup soy sauce
½ cup brown sugar
4 Tablespoons vinegar
1 Tablespoon toasted white sesame seeds
Chopped green scallions for garnish (optional)
Instructions
Cut the chicken thighs into 1″ to 1 ½” chunks. Place in a large bowl, sprinkle with salt, and toss with the cornstarch.
Heat a 12″ skillet with vegetable oil. Once hot, add chicken and lightly brown for 2-5 minutes. Transfer partially cooked chicken back to the bowl.
Using the same skillet, sauté garlic, ginger, and chili flakes on medium heat for 1 minute.
Add chicken stock, bourbon, soy sauce, brown sugar, and vinegar. Bring to a boil, then lower heat and simmer to reduce sauce for about 6-8 minutes.
Once sauce has thickened, return chicken to the skillet and cook on medium-high for about 5 minutes, or until chicken is tender and no longer pink.
Reduce heat, ensure chicken is cooked through, and sauce has thickened enough to coat the chicken.
Stir in toasted sesame seeds.
Serve over white rice, garnished with chopped green scallions.
