Mallorca Bread Buns with Guava and Cheese are a delightful fusion of sweet and savory, bringing together the richness of cheese and the tropical sweetness of guava. These buns are perfect for any time of day, whether as a morning treat or a sweet snack.
Ingredients
Unbleached all-purpose flour: 3 cups + 3 TBSP (375g)
Bread flour: 1 cup (163g)
Water: ½ cup (118g) + 2 TBSP for icing
Fine sea salt: 1 ½ Tsp (8g)
Eggs, preferably organic, at room temperature: 2
Egg yolks, at room temperature: 2
Buttermilk or full-fat milk, preferably organic, at room temperature: ¾ cup (173g)
Natural granulated sugar: ½ cup (100g) + 4 TBSP for cream cheese (50g)
Instant yeast: 1 packet (11g, 3 ½ Tsp)
Salted butter, preferably organic European style, cubed and softened: 8 TBSP (113.5g) + 4 TBSP for guava (57g)
Guava paste, cut into small chunks: 12 to 14 oz
Cream cheese, softened: 4oz (114g)
Extra butter for brushing on baked Mallorcas: 3 TBSP (about 36g)
Confectioner’s sugar: 1 cup (120g)
Instructions
Making the Dough:
Combine the all-purpose flour with bread flour in a medium bowl using a whisk.
Heat the water and 3 tablespoons of the flour mixture for about 15 seconds in the microwave, stir, and repeat briefly until it reaches a pudding-like consistency. Cool completely.
Add salt to the flour mixture.
In a stand mixer with a paddle attachment, mix eggs, egg yolks, buttermilk, sugar, yeast, and cooled flour-water mixture on medium speed until well blended.
Gradually add flour mixture at the slowest speed, switch to a dough hook, and knead until smooth.
Incorporate softened butter incrementally, then knead on medium speed for 20 minutes.
Let the dough rise in an oiled bowl, covered, for 1 ½ hours.
Making the Filling:
Cook guava paste with water until smooth, then blend in butter. Let it cool.
Mix cream cheese with sugar until smooth.
Assembling the Buns:
Preheat the oven to 400°F, reduce to 350°F upon baking.
Roll out dough, spread guava paste, and fold. Cut strips, roll them, and fill with cream cheese mixture.
Allow to rise briefly, then bake for 12-17 minutes until golden.
Finishing:
Melt extra butter and mix icing sugar with water and some butter. Brush baked Mallorcas with butter and icing.
