Description

This Mango Avocado Shrimp Salad combines sweet mango and creamy avocado with spicy, lime-kissed shrimp for a dish that’s bursting with tropical flavors. The juicy mangos and rich avocados provide a perfect balance to the seasoned shrimp, making it an irresistible choice for any meal.

For the chili seasoned shrimp:
1 lb. raw shrimp, peeled & deveined
1½ tsp chili powder
½ tsp paprika
¼ tsp salt
⅛ tsp cayenne pepper (optional for spice)
For the salad:
2 small mangos, diced (or 1 large mango)
1 large avocado, diced
¼ of a red onion, chopped
1 small jalapeno, deseeded & finely chopped
2 Tbsp cilantro, chopped
Juice of 36 limes (to taste)


Instructions

Prepare the shrimp: Pat the shrimp dry with a paper towel. In a large bowl, mix the chili powder, paprika, salt, and cayenne. Add shrimp and toss to coat evenly.
Heat a large skillet over medium-high heat and spray with cooking spray. Add shrimp in a single layer and sauté for 1-2 minutes per side until cooked through. Remove from heat and cut into bite-size pieces. Refrigerate to cool completely.
Assemble the salad: In a large bowl, combine cooled shrimp, mango, avocado, red onion, jalapeno, and cilantro. Drizzle with lime juice and toss to mix well.
Serve chilled or at room temperature with tortilla chips.
