Ingredients

Scale
  • 2 lbs. carrots, washed with skin on and tops trimmed
  • 1 tablespoon Extra virgin olive oil
  • ½ cup pure maple syrup
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cinnamon
  • Pinch of ground allspice
  • 2 cups dried cranberries

Instructions

  1. Preheat the Oven Set your oven to 400 degrees Fahrenheit and prepare a baking sheet by covering it with parchment paper.
  2. Prepare the Carrots In a large bowl, add the carrots, olive oil, maple syrup, dried oregano, parsley, basil, garlic powder, cinnamon, and allspice. Mix thoroughly, ensuring the carrots are well-coated. Reserve about 2-3 tablespoons of this mixture for later use.
  3. Bake the Carrots Transfer the seasoned carrots onto the prepared baking sheet, arranging them in a single layer. Place the baking sheet in the oven and roast for 15-20 minutes. The carrots should be golden, slightly wilted, and tender when done.
  4. Final Touch Remove the carrots from the oven and brush them with the reserved maple herb mixture. Arrange the carrots on a serving platter and scatter the dried cranberries around them attractively.
