4 bone-in chicken thighs
1 onion, cut into wedges
2 sweet potatoes, peeled and cut into ½ inch chunks
1 apple, diced
2 tablespoons olive oil
1 teaspoon salt
¼ teaspoon black pepper
3 tablespoons maple syrup
1 tablespoon fresh thyme


Instructions

Preheat your oven to 400°F (200°C). Heat a large cast iron skillet over medium-high heat on the stovetop for a few minutes.
Add 1 tablespoon of olive oil to the hot skillet. Place the chicken thighs in the skillet, skin side down, and sear for a few minutes until the skin is crispy.
While the chicken is browning, dice the sweet potatoes, onions, and apple.
In a mixing bowl, combine the remaining 1 tablespoon of olive oil with the salt, pepper, and maple syrup. Toss the sweet potatoes, apples, and onions in this mixture.
Flip the chicken thighs so they are skin side up, and arrange the sweet potatoes, apples, and onions around the chicken in the cast iron skillet. Sprinkle the fresh thyme over the top.
Transfer the skillet to the oven and bake for 1 hour, or until the chicken is cooked through to an internal temperature of 165°F (75°C). The sweet potatoes and apples should be fork-tender.
Allow the dish to cool for a few minutes before serving.
