- 1 tablespoon maple syrup
- 3–4 tablespoons brown sugar (optional)

- 2/3 cup chopped walnuts or pecans
- 2 tablespoons butter
- 2 tablespoons light brown sugar

- Bake potatoes for the first time: Preheat your oven to 400°F (204°C). Pierce the sweet potatoes with a fork, place them in a large baking pan, and bake until they are soft, which can take anywhere from 20 to 45 minutes depending on their size.
- Scoop out potatoes: Cut each baked potato in half lengthwise. Carefully scoop out the insides, ensuring the skins remain intact.
- Make filling: Place the potato skins back in the baking pan. In a separate bowl, mash the potato flesh until smooth. Mix in Greek yogurt, pumpkin pie spice, maple syrup, brown sugar (if using), and a pinch of salt. Scoop this mixture back into the sweet potato skins.
