150g butter, softened
85g muscovado sugar
110g brown sugar
50g egg
1 tsp vanilla extract
2g baking powder
15g cocoa powder
205g flour (divided into 95g and 110g)
150g dark chocolate, chopped into chunks
35g pecan nuts


Instructions

Preheat oven to 180°C.
Cream together butter, brown sugar, and muscovado sugar until smooth.
Mix in the egg and vanilla extract, then stir in the baking powder.
Divide the dough into two parts. To one part, add cocoa powder and 95g flour; to the other, add 110g flour.
Mix chocolate chunks into both doughs.
If the dough is sticky, refrigerate for 30 minutes.
Place a 20cm baking ring on a parchment-lined baking sheet. Alternate placing balls of vanilla and chocolate dough around the ring, starting with the edges then filling the center.
Bake for 10 minutes, then add pecan nuts and bake for another 15 minutes.
Remove from oven, lift off the ring, and let cool on a rack for 30 minutes before serving.
