34 boneless chicken breasts, depending on size
1 (8-oz) jar sun dried tomatoes, drained and rough chopped
1 cup heavy cream
1/2 cup chicken broth
3 garlic cloves, minced
1 chicken bouillon cube
1/2 cup grated Parmesan cheese, extra for serving
1 tsp Italian seasoning
2 tbsp extra virgin olive oil
Salt and pepper, to taste
Fresh parsley, for garnish


Instructions

Pat chicken dry and season well with salt and pepper.
Heat oil in a large skillet or Dutch oven over medium-high heat.
Brown chicken in oil on both sides, for 5 minutes each.
Remove chicken to a plate.
In the same pan, cook garlic for 30 seconds until fragrant, stirring constantly.
Add cream, broth, bouillon, Italian seasoning, tomatoes, and cheese. Season with salt and pepper.
Stir well until combined.
Add chicken back to pan, spoon sauce over, and reduce heat to medium.
Cook until chicken reaches an internal temperature of 165 degrees Fahrenheit, approximately 7-10 minutes.
Garnish with parsley and serve immediately with extra cheese if desired.
