Perfect for movie nights, family gatherings, or whenever you need a sweet snack, this recipe balances flavor and texture in a delightful treat that’s sure to please any crowd.

Ingredients

Scale
  • 8 cups popped popcorn
  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 2 tablespoons light corn syrup
  • 1 10 oz. bag large marshmallows (approximately 35 marshmallows)
  • 1 teaspoon vanilla

Instructions

  1. Step 1: Prepare the Popcorn and Baking Sheet In a large bowl, place the freshly popped popcorn. Set aside. Prep a large rimmed baking sheet by lining it with foil and lightly coating it with non-stick cooking spray.
  2. Step 2: Melt the Butter In a large saucepan over medium heat, melt the butter completely, ensuring it doesn’t brown.
  3. Step 3: Add Sugar and Syrup Into the melted butter, stir in the brown sugar and the light corn syrup. Mix these for 2-3 minutes on medium heat until the mixture is smooth and well combined.
  4. Step 4: Melt the Marshmallows Lower the heat to medium-low and add the marshmallows to the saucepan. Continue to stir until the marshmallows are entirely melted and incorporated, making sure the mixture doesn’t stick or burn.
  5. Step 5: Combine with Popcorn Remove the saucepan from heat after melting the marshmallows and stir in the vanilla extract. Pour this mixture over the popcorn in the bowl, stirring well to ensure every piece of popcorn is evenly coated with the caramel-marshmallow mixture.
  6. Step 6: Cool Before Serving Spread the coated popcorn on the prepared baking sheet. Let it cool completely at room temperature to allow the coating to set and become crisp.
