Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
Mashed potatoes, for topping
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or line it with cupcake liners.
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, ketchup, Worcestershire sauce, dried thyme, salt, and pepper. Mix until well combined.
Divide the meat mixture evenly among the muffin cups, pressing it down gently to fill the cups.
Bake in the preheated oven for 20-25 minutes, or until the meatloaf cupcakes are cooked through and browned on top.
While the meatloaf cupcakes are baking, prepare your mashed potatoes. You can use store-bought mashed potatoes or make your own from scratch.
Once the meatloaf cupcakes are done baking, remove them from the oven and let them cool for a few minutes.
Transfer the mashed potatoes to a piping bag fitted with a star tip (or simply use a spoon) and pipe the mashed potatoes onto the top of each meatloaf cupcake to resemble frosting.
Sprinkle chopped fresh parsley over the top of the mashed potatoes for garnish.
