Ingredients
1 lb ground chicken or ground turkey π
1/4 cup whole wheat panko breadcrumbs π
1 egg π₯
1/3 cup sun-dried tomatoes, packed in oil, chopped π
1/4 cup feta cheese π§
1/4 cup parmesan cheese π§
2 cloves garlic, minced (or 1/2 teaspoon garlic powder) π§
1/4 cup green onions, chopped π§
2 tablespoons fresh parsley, chopped πΏ
1/2 teaspoon each salt and black pepper π§
Squeeze of lemon, optional π
Instructions
1οΈβ£ Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper or spray with nonstick spray. π₯
2οΈβ£ In a large bowl, combine ground chicken, breadcrumbs, egg, sun-dried tomatoes, feta and parmesan cheeses, garlic, green onions, parsley, and season with salt and pepper. Mix everything together using a spoon or your hands until well combined. π²
3οΈβ£ Using a small to medium cookie scoop (about 1.2 tablespoons), form 2-inch sized balls and place them on the prepared baking sheet. You should get about 18 meatballs. π§
4οΈβ£ Pop the sheet pan in the oven and bake for about 20 to 25 minutes, until the meatballs are lightly browned and cooked through. β³
5οΈβ£ Squeeze a little lemon juice over the top (if desired) and serve alongside a Mediterranean salad or make bowls with brown rice, homemade tzatziki sauce, and fresh veggies! ππ₯π
