Mediterranean Chicken Meatballs 🍽️

Ingredients

1 lb ground chicken or ground turkey 🍗
1/4 cup whole wheat panko breadcrumbs 🍞
1 egg 🥚
1/3 cup sun-dried tomatoes, packed in oil, chopped 🍅
1/4 cup feta cheese 🧀
1/4 cup parmesan cheese 🧀
2 cloves garlic, minced (or 1/2 teaspoon garlic powder) 🧄
1/4 cup green onions, chopped 🧅
2 tablespoons fresh parsley, chopped 🌿
1/2 teaspoon each salt and black pepper 🧂
Squeeze of lemon, optional 🍋


Instructions

1️⃣ Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or spray with nonstick spray. 🔥

2️⃣ In a large bowl, combine ground chicken, breadcrumbs, egg, sun-dried tomatoes, feta and parmesan cheeses, garlic, green onions, parsley, and season with salt and pepper. Mix everything together using a spoon or your hands until well combined. 🍲

3️⃣ Using a small to medium cookie scoop (about 1.2 tablespoons), form 2-inch sized balls and place them on the prepared baking sheet. You should get about 18 meatballs. 🧆

4️⃣ Pop the sheet pan in the oven and bake for about 20 to 25 minutes, until the meatballs are lightly browned and cooked through. ⏳

5️⃣ Squeeze a little lemon juice over the top (if desired) and serve alongside a Mediterranean salad or make bowls with brown rice, homemade tzatziki sauce, and fresh veggies! 🍋🥗🍚
