Ingredients:
- 2 large boneless, skinless chicken breasts – The base of our dish, providing a lean, high-protein component.
- Salt and freshly ground black pepper – For seasoning the chicken to enhance its natural flavors.
- ½ cup + 1/3 cup Greek salad dressing – Used to marinate the chicken and add in the sauce for extra zest.
- 2 tablespoons olive oil – For searing the chicken, adding a slight fruity note.
- 1/3 cup dry white wine – Helps deglaze the pan and adds a subtle acidity that brightens the dish.
- 3 cloves garlic, minced – Adds a pungent, aromatic flavor that is quintessential in Mediterranean cooking.
- 2 tablespoons butter – Provides richness and helps carry the flavors of garlic and spices.
- 1/3 cup chicken broth – Used to create a luscious sauce for the chicken.
- 2 tablespoons honey – Offers a touch of sweetness to balance the savory elements of the dish.
- ½ teaspoon mustard powder – Adds depth and a hint of spice.
- ½ teaspoon Worcestershire sauce – Gives a complex, umami flavor to the sauce.
- 1/3 cup Feta cheese, crumbled – Adds a creamy, tangy element that is distinctly Greek.
- 1 cup cherry tomatoes – Their juiciness and mild sweetness complement the savory components.
- ½ cup mixed olives – Black, green, and kalamata olives bring a briny depth and varied texture.
Directions:
- Preparation: Start by preheating your oven to 425°F (220°C). This high temperature is crucial for a beautifully roasted finish.
- Prepare the Chicken: Slice each chicken breast in half lengthwise to create thinner fillets. Place them between sheets of plastic wrap and pound to an even thickness of about ½ inch. This ensures that they cook evenly and remain juicy.
- Marinate: Season the chicken fillets with salt and pepper, then place them in a resealable bag with ½ cup of Greek salad dressing. Allow them to marinate at room temperature for 20 minutes to soak up the flavors.
- Sear the Chicken: Heat the olive oil in a skillet over medium-high heat. Add the marinated chicken and sear each side until golden brown, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
- Make the Sauce: Pour the dry white wine into the skillet to deglaze it, scraping up any browned bits from the bottom. Reduce the wine by half, then stir in the garlic and butter until the garlic is fragrant. Add the additional Greek dressing, chicken broth, honey, mustard powder, and Worcestershire sauce. Let it simmer until the sauce slightly thickens.
- Bake: If your skillet is not oven-proof, transfer the sauce to a baking dish. Return the chicken to the dish, top it with crumbled Feta, and scatter the cherry tomatoes and olives around. Bake in the preheated oven for 12 minutes, or until the chicken is fully cooked.
