Stuffed with fresh spinach, sweet tomatoes, tangy feta cheese, and gooey mozzarella, these quesadillas are the perfect choice for a quick and satisfying lunch or dinner.

1 diced tomato (grape or cherry tomatoes for sweetness, or plum tomatoes)
⅓ cup diced red onion
1 cup chopped spinach
½ cup feta cheese
1 cup shredded mozzarella cheese
3 burrito-style tortillas


Instructions

Prepare the Filling: In a bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and shredded mozzarella.
Assemble the Quesadillas: Place ⅓ of the filling on one half of each tortilla. Fold the tortilla in half, pressing lightly to flatten.
Cook the Quesadillas: Heat a small amount of oil in a large skillet or griddle over medium heat. Transfer the folded tortillas to the skillet and cook for 3-4 minutes on each side, pressing down with a spatula, until both sides are lightly browned and the cheese is melted.
Serve: Remove the quesadillas from the skillet, cut into 4 slices, and serve warm with your choice of toppings such as sour cream, salsa, or pico de gallo.
