Ingredients
1.5 lb raw shrimp, peeled and deveined (large, about 15–20 per pound)
½ teaspoon smoked paprika
½ teaspoon chili powder
½ teaspoon Italian seasoning
½ teaspoon red pepper flakes
¼ teaspoon salt
2 tablespoons olive oil
Greek Orzo with Feta:
1.5 cups orzo
3 cups chicken or vegetable stock
8 oz cherry tomatoes, halved
⅓ cup sun-dried tomatoes in olive oil, chopped
⅓ cup kalamata olives, sliced
¼ cup green olives, sliced
6 oz feta cheese, crumbled
3 tablespoons lemon juice, freshly squeezed
3 tablespoons extra virgin olive oil
¼ teaspoon smoked paprika
¼ teaspoon Italian seasoning
¼ cup fresh basil, chopped
Salt and pepper to taste
Instructions
Cook shrimp: In a large bowl, combine shrimp with smoked paprika, chili powder, Italian seasoning, red pepper flakes, and salt. Heat a large skillet on medium and add olive oil. Cook shrimp 3-4 minutes until pink, then remove.
Make Greek orzo: In the same skillet, add orzo and stock. Bring to a simmer and cook covered for 10 minutes. Stir in tomatoes, olives, and feta cheese, saving some cheese for garnish. Season with lemon juice, olive oil, paprika, and seasoning.
Assembly: Return shrimp to skillet, warm through. Serve topped with reserved feta and basil.
