Ingredients

Scale
  • 2 egg whites at room temperature
  • ½ teaspoon cream of tartar
  • ⅔ cup superfine sugar
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 cup chopped pecans (optional)
  • Crushed candy canes for garnish (optional)

Instructions

  1. Prepare the Baking Sheets: Line 2 baking sheets with foil or parchment paper and preheat the oven to 350 degrees Fahrenheit.
  2. Mix Egg Whites: Using a handheld electric mixer or a stand mixer, beat the egg whites until they are foamy. Blend in the cream of tartar and continue to mix until the mixture becomes fluffy and light.
  3. Add Sugar and Vanilla: Gradually add the sugar in four separate batches, incorporating the vanilla extract halfway through the process. Keep beating until the egg whites form glossy, stiff peaks.
  4. Fold in Add-Ins: Gently fold in the chocolate chips and the chopped pecans, if using, taking care to maintain the airiness of the meringue.
  5. Spoon onto Baking Sheets: Using two teaspoons, drop spoonfuls of the meringue mixture onto the prepared baking sheets.
  6. Add Garnishes and Bake: If desired, sprinkle with crushed candy canes. Place the baking sheets in the oven, turn off the heat immediately, and leave the cookies in the closed oven overnight. This allows them to harden and develop a crisp texture.
