  • Salt and pepper, to taste
  • 1 cup rice (parboiled preferred)
  • 1.5 cups broth (or more if needed)
  • 1 jar (16-oz) chunky salsa
  • 1 can (15-oz) black beans
  • 1 cup sweet corn, canned or frozen
  • Optional for serving: Shredded cheese, lime wedges, sour cream, chopped tomatoes, cilantro, avocado, tortilla chips

Instructions

  1. Step 1: Prepare the Base Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 2 minutes until it starts to become translucent.
  2. Step 2: Add Garlic and Beef Add the minced garlic and ground beef to the skillet. Continue cooking until the beef is thoroughly browned.
  3. Step 3: Incorporate Vegetables and Seasonings Stir in the diced red and yellow peppers, and cook for an additional minute. Follow by mixing in the tomato paste, taco seasoning, salt, and pepper, and cook for another minute to distribute the flavors evenly.
  4. Step 4: Add Remaining Ingredients Mix in the rice, broth, salsa, black beans, and corn. Stir well to combine all the ingredients.
