- 1 lb lean ground beef
- 1 packet taco seasoning (or homemade equivalent)
- 2/3 cup water
- 1 Tablespoon oil
- 20 corn tortillas
- 2 cups refried beans (or a 16 oz can)
- 1 1/4 cups red enchilada sauce (or a 10 oz can)
- 2 cups shredded cheddar cheese
- 1 Roma tomato, diced
- 1/2 cup sliced olives
- 3 green onions, chopped

- Prepare the Beef: Cook the ground beef over medium heat, breaking it into small pieces with a wooden spoon, until fully browned. Drain any excess grease, stir in the taco seasoning and water, and simmer until most of the liquid has evaporated. Set aside.
- Cook the Tortillas: Heat oil in a small skillet over medium-high heat. Cook the corn tortillas one at a time until golden and slightly crisp, flipping them halfway through. Drain on paper towels to remove excess oil.
- Assemble the Flatbreads: Start with spreading a thin layer of enchilada sauce on a tortilla. Add a layer of refried beans and a spoonful of the seasoned beef. Sprinkle with cheese before topping with another tortilla. Add another layer of enchilada sauce and more cheese on top of the second tortilla.
- Bake: Preheat your oven to 400 degrees F. Place the assembled flatbreads on a baking sheet and bake for about 10 minutes or until the cheese is bubbly and golden.
- Garnish and Serve: Remove from the oven and garnish with diced tomatoes, sliced olives, and chopped green onions. Add a dollop of sour cream on each flatbread. Cut into wedges and serve hot.
