6 ears corn, husked and silk removed
Olive oil
2 tsp chipotle chili powder
¼ cup cotija cheese, crumbled
¼ cup fresh parsley, finely chopped
Sea salt
2 limes, juiced
Mexican Cream Sauce (Crema):
1 cup heavy cream
2 tbsp sour cream
1 lime, juiced
¼ tsp chipotle chili powder
¼ tsp salt


Instructions

Wrap each ear of corn in foil after brushing with olive oil and lightly seasoning with sea salt.
Preheat the grill to medium heat. Grill the corn for 15-20 minutes, turning frequently, until tender.
Mix the crema ingredients in a small bowl while the corn grills.
Remove corn from foil, brush with crema, and sprinkle with chipotle chili powder, cotija cheese, parsley, and lime juice.
Serve hot.
