Mid-Summer Raspberry Eton Mess 🍓🍃

  • Author: Dulcia
  • Total Time: 30min
  • Yield: 6 1x

Ingredients

Scale

Meringues: Store-bought or homemade. For homemade, you’ll need:
34 egg whites
3/4 cup sugar
Fresh raspberries: About 2 cups
Whipped cream: 2 cups of heavy cream, whipped until soft peaks form
Icing sugar: For dusting (optional)
Mint leaves: For garnish (optional)

Instructions

1️⃣ Prepare the Meringues:

If using homemade meringues, whip 3-4 egg whites until soft peaks form. Gradually add about 3/4 cup of sugar until the meringue is glossy.
Spoon the meringue onto a baking sheet in dollops and bake at a low heat (around 200°F or 90°C) until dry. 🍳
2️⃣ Whip the Cream:

In a large bowl, whip the heavy cream until it forms soft peaks. Be careful not to over-beat, as it can become too thick and butter-like. 🥄
3️⃣ Assemble the Eton Mess:

Break the meringue into bite-sized pieces and layer in a serving bowl or individual glasses.
Add a layer of whipped cream, then a generous amount of fresh raspberries.
Repeat the layering process until all ingredients are used up. 🍰
4️⃣ Garnish and Serve:

Dust with icing sugar and garnish with mint leaves if using.
Serve immediately or chill for a few hours before serving to allow the flavors to meld together. 🍃❄️
Enjoy your refreshing and delicious Mid-Summer Raspberry Eton Mess! Perfect for a summer gathering, offering a sweet and slightly tangy treat that everyone will love. 🌞🍨
