Description

These Middle Eastern Tofu Kebabs are a delightful combination of bold spices and fresh herbs, offering a flavorful and satisfying plant-based alternative to traditional kebabs. The firm tofu is mashed with a mixture of aromatic spices like cumin, coriander, and sumac, along with fresh parsley and coriander, creating a richly seasoned mixture that’s shaped into kebabs and lightly fried until golden brown.

450g firm tofu, prepared according to pack instructions
1/4 red onion, finely chopped
3 garlic cloves, minced
1 1/2 tsp cumin
1 1/2 tsp coriander
1 tsp sumac
1 tsp dried mint
1/2 tsp turmeric
1/2 tsp chili powder
1/21 tsp salt
1/4 tsp black pepper
3 tbsp tomato puree
65g plain flour or chickpea flour
15g fresh parsley, finely chopped
15g fresh coriander, finely chopped
Oil for frying


Instructions

Break up the tofu into small pieces in a large bowl.
Add the chopped onion, minced garlic, spices (cumin, coriander, sumac, dried mint, turmeric, chili powder, salt, and black pepper), tomato puree, flour, and fresh herbs (parsley and coriander) to the tofu.
Use your hands to mash everything together until the mixture holds its shape when forming.
Shape the mixture into small kebabs in the palm of your hand, or form them into round patties. Avoid making them too large to ensure they hold together well. This recipe should yield about 12 mini kebab shapes.
Heat a little neutral oil in a frying pan over medium heat. Fry the kebabs for about 1-2 minutes on each side, turning until all sides are browned.
Serve the tofu kebabs with rice or pita bread, along with salad and hummus or tahini sauce.
