2 corn tortillas, cut into strips or squares
1 jalapeño pepper, diced
1 small red bell pepper, diced
1 small onion (white or yellow), diced
45 eggs, lightly scrambled
1 medium tomato, diced
Salt and pepper, to taste
½ cup shredded pepper jack or Monterey Jack cheese
For Serving:
Spicy chili flakes
Extra sliced peppers
Avocado
Hot sauce


Instructions

Crisp the Tortillas: Heat the vegetable oil in a large pan over medium heat. Add the corn tortilla strips and fry them lightly in the hot oil until they crisp up, flipping occasionally, about 4-5 minutes. Remove the crispy tortillas from the pan and set them on paper towels to drain. Sprinkle with a bit of salt while they are still hot.
Cook the Vegetables: In the same pan, add the diced jalapeño, red bell pepper, and onion. Cook them down for about 5 minutes, until they soften and become fragrant.
Add the Eggs: Stir in the diced tomato, then pour in the lightly scrambled eggs. Season with salt and pepper, and stir occasionally. Cook the eggs for about 2-3 minutes, or until they just begin to set.
Combine and Serve: Remove the pan from the heat and stir in the reserved crispy tortillas and shredded cheese until everything is well combined and the cheese is melted.
