1 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsweetened applesauce
1/4 cup butter, melted
1 egg
1/2 teaspoon vanilla extract


Instructions

Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with mini muffin liners.
In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
In another bowl, combine applesauce, melted butter, egg, and vanilla extract.
Add the wet ingredients to the dry ingredients, stirring just until moistened.
Fill prepared mini muffin cups about 3/4 full with batter.
Bake for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
