Onigiri:
2 cups uncooked short grain rice
2 cups water
Miso Flavour:
1 tbsp miso
2 tsp mirin
2 tsp sake
2 tsp sugar
1.5 tbsp butter
1 tsp finely chopped chives (for garnish)
1 tsp sesame seeds (for garnish)
Soy Sauce Flavour:
1.5 tbsp vegetable oil
1 tbsp soy sauce
1.5 tbsp Everything Bagel seasoning
1.5 tbsp butter


Instructions

Cook the rice according to your rice cooker’s instructions.
While the rice cooks, combine the miso, mirin, sake, and sugar in a bowl. Mix well.
Divide the cooked rice into 6 equal portions. Using cling wrap, shape each portion into a triangle.
For Miso Flavour:
Heat a cast iron skillet over medium heat and add butter.
Grill the rice balls for about 1 minute per side, then brush with miso mixture and continue grilling until crispy.
For Soy Sauce Flavour:
Heat a skillet with vegetable oil, grill the rice balls similarly, and brush with soy sauce each time they are turned. Grill until crispy.
Serve garnished with chives, sesame seeds, or Everything Bagel seasoning.
