For the Bowl:
½ pound fresh sushi-grade skinless salmon
1 tablespoon capers
1 red onion, thinly sliced
½ cucumber, thinly sliced
1 teaspoon sesame seeds
1 teaspoon chives, finely chopped
Flaky salt, to taste
Black pepper, to taste
For the Miso Dressing:
2 tablespoons olive oil
2 tablespoons sesame oil
1 tablespoon soy sauce
1 teaspoon white miso
1 tablespoon lemon juice
½ teaspoon brown sugar
For the Sushi Rice:
½ cup sushi rice, cooked according to package directions


Instructions

In a small bowl, whisk together the ingredients for the miso dressing: olive oil, sesame oil, soy sauce, white miso, lemon juice, and brown sugar. Set aside.
Using a sharp knife, slice the sushi-grade salmon against the grain into very thin slices.
Arrange the salmon slices in a bowl, slightly overlapping them for a beautiful presentation.
Top the salmon with thinly sliced cucumber, sesame seeds, chopped chives, and red onion.
Drizzle the bowl with the miso dressing, and season lightly with flaky salt and black pepper.
Scatter the capers on top and serve with lemon wedges. For a heartier meal, serve the sashimi over sushi rice. Enjoy immediately!
