Ingredients for the Catfish:

4 (6 oz) catfish fillets (US Farmed)
¼ tsp salt
¼ tsp black pepper
Ingredients for the Butter Sauce:

1 cup parmesan cheese, grated
½ cup mayonnaise
¼ cup butter, softened
3 green onions, sliced
½ tsp Worcestershire Sauce
½ tsp Tabasco
¼ tsp salt
¼ tsp pepper


Instructions

Preheat oven to 350 degrees. Line a baking dish with non-stick aluminum foil or coat with a thin layer of cooking spray. If you plan to broil the fish, use a broiler-safe baking dish.
Combine the butter sauce ingredients (butter, parmesan cheese, Worcestershire Sauce, mayo, Tabasco, green onions, salt, and pepper) in a small bowl.
Pat the catfish dry with paper towels. Place the fish on the baking dish, and season both sides with salt and pepper. Cover the fish with the combined butter sauce mixture.
Bake for 20-25 minutes, or until the fish is golden and flakes easily with a fork.
OPTIONAL – Place under the broiler until the dish is browned to your liking.
Add more salt and pepper to taste if you like. Serve immediately.
