  • 1/2 cup light brown sugar (dark can also be used)
  • 1/2 cup oil or melted and cooled butter
  • 2 eggs, room temperature
  • 1 tbsp vanilla extract
  • 3/4 cups unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 1/2 tsps cinnamon
  • 1/8 tsp nutmeg (optional)
  • 1 1/2 tsps baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp white sugar (for topping)
  • 1/4 tsp cinnamon (for topping)

Instructions

  1. Preheat the Oven Set your oven to preheat at 375°F. While waiting, line a muffin tin with 12 liners to prepare for the batter.
  2. Prepare Cinnamon Sugar Topping Mix 2 tablespoons of white sugar with 1/4 teaspoon of cinnamon in a small bowl and set aside for later use.
  3. Combine Dry Ingredients In a medium-sized bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, optional nutmeg, and salt. Put this aside as you prepare the wet ingredients.
  4. Mix Wet Ingredients In a larger bowl, start by mixing the white and brown sugars with the oil. Add in the eggs, applesauce, and vanilla extract, continue whisking until you get a smooth blend.
  5. Combine Wet and Dry Ingredients Gently fold in the dry ingredients into the wet mixture using a spatula until the contents are well incorporated without over-mixing.
  6. Fill Muffin Liners and Add Topping Using a cookie scoop or spoon, evenly distribute the muffin batter into the prepared liners. Sprinkle the earlier prepared cinnamon sugar over each muffin before baking.
  7. Bake Place the muffin tin in the oven and bake for 15-20 minutes. Check with a toothpick at the 15-minute mark; if it comes out clean, they are ready to be removed from the oven.
