- 1/2 cup light brown sugar (dark can also be used)
- 1/2 cup oil or melted and cooled butter
- 2 eggs, room temperature
- 1 tbsp vanilla extract
- 3/4 cups unsweetened applesauce
- 2 cups all-purpose flour
- 1 1/2 tsps cinnamon
- 1/8 tsp nutmeg (optional)
- 1 1/2 tsps baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 tbsp white sugar (for topping)
- 1/4 tsp cinnamon (for topping)
Instructions
- Preheat the Oven Set your oven to preheat at 375°F. While waiting, line a muffin tin with 12 liners to prepare for the batter.
- Prepare Cinnamon Sugar Topping Mix 2 tablespoons of white sugar with 1/4 teaspoon of cinnamon in a small bowl and set aside for later use.
- Combine Dry Ingredients In a medium-sized bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, optional nutmeg, and salt. Put this aside as you prepare the wet ingredients.
- Mix Wet Ingredients In a larger bowl, start by mixing the white and brown sugars with the oil. Add in the eggs, applesauce, and vanilla extract, continue whisking until you get a smooth blend.
- Combine Wet and Dry Ingredients Gently fold in the dry ingredients into the wet mixture using a spatula until the contents are well incorporated without over-mixing.
- Fill Muffin Liners and Add Topping Using a cookie scoop or spoon, evenly distribute the muffin batter into the prepared liners. Sprinkle the earlier prepared cinnamon sugar over each muffin before baking.
- Bake Place the muffin tin in the oven and bake for 15-20 minutes. Check with a toothpick at the 15-minute mark; if it comes out clean, they are ready to be removed from the oven.
