Ingredients

Scale
  • 1 pound dried spaghetti
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced
  • Kosher salt
  • Freshly ground black pepper
  • 6 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Pecorino Romano cheese, plus more for serving
  • 2 tablespoons coarsely chopped fresh parsley leaves

Instructions

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, following package instructions.
  2. Prepare the Mushrooms: Heat 1 tablespoon of butter and olive oil in a skillet. Sauté sliced mushrooms with salt and pepper until browned and tender.
  3. Add Garlic and Seasonings: Add minced garlic, red pepper flakes, and remaining butter to the mushrooms. Sauté for an additional minute.
  4. Combine Ingredients: Drain cooked pasta, reserving 3/4 cup of cooking water. Toss pasta, water, and Pecorino Romano cheese with mushrooms until sauce thickens.
  5. Final Touch: Stir in chopped parsley before serving.
  6. Storage: Leftover spaghetti can be stored in the refrigerator for up to 3 days. Reheat with a few drops of water in the microwave or skillet.
